🍽️ The idea behind the dish

A dish that not only tastes great but also looks good – this pink-gold contrast is simply an eye-catcher. The snow-white catfish fillet is the highlight.
👨🍳 The recipe (for 2–3 people)
Ingredients:
- 2 catfish fillets (150–200 g each)
- 1 roll of puff pastry
- 150 g cooked beetroot
- 1 shallot
- 1–2 tbsp sour cream or cream cheese
- 1–2 tsp horseradish
- Lemon juice, salt, pepper
- Dill or chives
- 1 egg yolk
Preparation:
- Finely chop the shallot, sauté until translucent in butter. Dice or purée the beetroot finely, mix with sour cream, season.
- Mix horseradish with sour cream and a little lemon juice.
- Pat catfish fillets dry, lightly salt.
- Roll out puff pastry, spread beetroot mixture on it, place fish on top, top with horseradish cream and herbs.
- Wrap, brush with egg yolk.
- Bake at 200°C (fan oven 180°C) for approx. 20–25 minutes, until golden brown.
