Many people are familiar with tuna mousse – but hardly anyone knows where the tuna actually comes from. It usually originates from distant fishing grounds, often from stocks threatened by overfishing. Long transport routes and unclear fishing methods make tuna products problematic for the environment and sustainability.

With our new LocalFish fish mousse, we now offer a truly Swiss-made alternative . We use sustainably farmed Swiss fish, ensuring short transport routes and gentle processing. The result: a mousse that not only tastes delicious but also leaves you with a good feeling. Good for nature and people.

We're starting with our Tom & Olive variety, a creamy fish mousse with sun-ripened tomatoes and a Mediterranean olive note. This brings a taste of vacation straight to your glass – without compromising on origin or sustainability.


Recipe idea for an aperitif: Fish mousse tartlet with herbs and caper berries

For those who want to make a real statement at their aperitif, try our Tom & Olive fish mousse combined with homemade olive oil tartlets. Crispy, fresh, and with an aromatic garnish – perfect for guests who appreciate something special.

Olive oil tartlets (approx. 8 pieces)

Ingredients:

  • 55 g white flour
  • 20 ml water
  • 15 g olive oil
  • 3 g sugar
  • 2 g salt

Preparation:

  1. Knead all ingredients together to form a homogeneous dough, wrap in foil and chill for 1 hour.
  2. Roll out the dough thinly (approx. 1 mm), cut out circles 7–8 cm in diameter.
  3. Place the dough onto inverted tartlet molds and secure with a second mold.
  4. Bake at 160°C (convection oven) for 20–30 minutes until golden brown. Let cool.

Catfish mousse tartlet

Ingredients:

  • 8 olive oil tartlets
  • 1 glass of fish mousse, tomato & olive
  • Seasonal herbs & flowers (e.g. dill, tarragon, basil)
  • Lemon zest
  • Caper berries

Preparation:

  1. Spread the mousse onto the tartlets and shape them.
  2. Slice the caper berries into thin slices and arrange them decoratively.
  3. Garnish with fresh herbs and edible flowers.
  4. Sprinkle with lemon zest and serve immediately.
